Orange Ginger Stir Fry

This Ginger Orange Glaze is similar to “Panda Express Orange Chicken.”

Another INTERCHANGEABLE recipe, use this same recipe with most types of veggies and meat or tofu. Jump to more “convertible” recipes.

Orange Ginger Stir Fry

1) Saute until the onions and meat are lightly browned, about 2 minutes, stir occasionally:

  • ​2 Tbls oil​ (avocado, peanut, or olive oil) ​
  • 1​-inch fresh ginger, minced​
  • 1 onion, ​julienned  (I use a red onion.)
  • 1 lbs thawed meat, your choice:
    • Chicken (breast or thighs, small bite-size pieces)
    • Ground beef, chicken, or pork (small bite-size pieces/meatballs)
    • Shrimp (peeled and deveined, tails on is optional)
    • Calamari (IMPORTANT: follow steps 1 – 3; and cook them with the garlic)

2) Add and toss well, 3 veggies of your choice, let cook for 3 minutes, stir occasionally:

  • 1 cup broccoli florets  (or broccoli slaw)
  • 2 ribs celery, thinly sliced
  • 1 cup shredded cabbage (green or purple)
  • 2 carrots, thinly sliced or shredded
  • 1 baby Bok Choy, chopped
  • 1 zucchini, half moons or small wedges

3) Clear the center of the pan and fry the garlic in the sesame oil, until lightly brown, about 30 seconds:

  • 1/2 Tbls toasted sesame oil
  • 5​ garlic​ cloves​, ​thinly ​​sliced

4) Add and mix everything well:

  • ​2 mandarin oranges (peeled segments)​
  • ​3 Tbls orange marmalade (or 1 Tbls brown sugar)
  • ​1 tsp chili paste​ (more to taste)
  • 1/2 tsp chipotle pepper  (more to taste)

5) Add and mix everything well, let cook until heated through and thickened, about 1 minute, stir constantly:

  • 1 cup orange juice (Fresh squeezed mandarin is best. And use the pulp, chopped.)​
  • ​1 Tbls rice wine vinegar
  • ​1 Tbls soy sauce
  • Slurry:
    • 1 Tbls cold water
    • 1 Tbls cornstarch

6) Serve, and top with:

  • ​Lime zest
  • 2 lime wedges per serving​
  • Chopped cilantro​
  • Thinly sliced scallions
  • Toasted sesame seeds

7) Serving ideas:

  • Tacos, Taco Bowl, Burrito, Tostada, Quesadilla w/Quesa Oaxaca cheese
