Marinated Watermelon w/Feta Cheese

Watermelon marinated in champagne vinegar and lime, served w/cheese and mint

This recipe is soooo easy, sooo refreshing and such a surprise of mixed flavors. It was inspired by a colleague, who brought it to a potluck event. She was inspired by another, who was inspired by another, so, I’m not sure of its origin. The recipe I received was to use a balsamic vinegar, raw red onions (and did not include the lime), which I made many many times. I’ve switched tho to using white vinegars and no onions and adding lime and a cheese, such as the feta or raw almond cheese.

The recipe

Mix together in medium-size bowl and refrigerate for at least an hour, tossing often:

  • 8 cups watermelon, bite-size pieces
  • 2 tbs balsamic vinegar
  • 1 lime, zest and juice

Just before serving, toss in:

  • 1 bunch mint, torn into bite-sized pieces
  • 16 oz feta cheese, cut into bite-sized pieces
