Learn What to Cook for Dinner: using cooking methods or recipes

I teach these two approaches to cooking, and I urge you to know both:

1) Using recipes

The benefit of using RECIPES is so you don’t have to reinvent the wheel. You can see what other people are doing with specific ingredients, temperatures, length of time, etc. You have a safe bet that following their directions is going to work.

The drawback of using recipes is that they are limiting because you get one dish. UNLESS you understand the principles of the recipe — the cooking method.

2) Using cooking methods

In order to alter a recipe, create your own, or improvise as you go, you will need to:

  • have an understanding of cooking methods (especially the specific cooking method that the recipe is using)
  • be able to predict an outcome when you change ingredients and elements of the recipe

My goal is for you to be autonomous in the kitchen, to be able to make decisions easily and with certainty. And this can only be obtained by teaching you what to expect with each cooking method. Once you have the understanding of how heat and time changes food, then you will be able to put the cookbooks away, and create your own favorite dishes.

Knowing the fundamentals of science and cooking is the secret to all good cooks. Just let me know the level of science you want to know and I will customize my talking points for you.
