Jalapeno Mango Cilantro Lime Dressing

  • 5 – 20 Pickled Jalapeno slices
  • 1 cup cubed Mango
  • 1/4 cup Olive oil
  • 2 Limes, zest/juice (reserve the zest for garnish)
  • 1 bunch Cilantro, rough chopped
  • 1/2 tsp Salt
  • ———-
  • Water, add a 1/4 cup at a time to desired consistency

Blend all ingredients well (I use an immersion blender).

Add water to desired consistency, then adjust the seasonings as needed:

    1. Not sweet enough:
      • Add a bit of honey if theĀ mango is not sweet.
    2. Too sweet:
      • Add a bit more lime juice if the sauce is too sweet.
    3. Too sour:
      • Add a bit more salt if it’s too acidic (if too much lime).
    4. Too much heat from the Jalapenos:
      • Add a bit more olive oil if too much jalapeno.
    5. Not hot enough:
      • Add a few more jalapeno slices or its juice for more heat.
    6. Too thick:
      • Add a bit of water to desired consistency.
      • Add a bit of the pickled jalapeno juice.
    7. Too thin:
      • Blend at high speed if the oil is starting to separate
      • Add more oil while blending.
      • Add some avocado (or more mango).
