“Cooking Healthy Outside the Box – CSA made easy”

I’ve come up with 3 recipes based on the goodies that are packed in this week’s “Regular box” from “Farm Fresh To You.”

This week, the fresh produce that is in the box is:

  • 3 Yellow Peaches
  • 2 Heirloom Tomatoes
  • 2 bunches of Nantes Carrots
  • 1 lb Gypsy Red Bell Peppers
  • 1 Muskmelon
  • 1 lb Baby Bok Choy
  • 1 bunch Red Beets
  • 1 lb Apricots
  • 1 bunch Green Leaf Lettuce
  • 1 Cucumber

I created recipes (see images, below) based on this list, with using just a few other ingredients.

Employees -about 1600 ppl come through the cafeteria each day- will have a taste of these 3 dishes…

Steamed Carrots and Beets w/Sweet-spiced Fruit Coulis

(using the carrots, beets, peaches and apricots; added ingredients are: butter, Chinese 5 spice, salt)

Fruit Soup with Almond Butter

(using the muskmelon, red bell pepper and cucumber; added ingredients are: balsamic vinegar, roasted almond butter, and cinnamon)

Bok Choy and Tomato Salad w/Garlic and Lime

(using the bok choy, tomatoes and lettuce; added ingredients are: sesame oil, rice vinegar, garlic and lime)
