How to freeze bananas/fruit

Freezing bananas: (use this procedure for freezing most fruits)

Best to freeze individual pieces for 2 hours (on a cookie sheet), then transfer the frozen pieces to a ziptop baggie.

If you put the room-temperature banana pieces into a baggie and then freeze them you’ll more than likely end up with one or several frozen chunks of banana pieces. Then – when you want a couple of frozen pieces – you’ll need to pound the baggie on the counter, or the floor, hoping to break apart just the right amount of pieces you need.

I've already sliced 10 bananas, each into 8 pieces, so that in the future I know to take out 8 pieces for one banana. Now I'll slice the last banana.

Slicing each banana into the same number of pieces will help you in the future — you’ll know to take out 8 pieces when you want one banana.

Cut this half down the center and continue cutting each segment in half until you have a total of 8 pieces.

See my recipes using the frozen banana pieces in drinks/smoothies, dairy-free (and raw) sauces, desserts and soups. The bananas are used as thickeners instead of cream. Don’t want the banana flavor in your dish? …. then see my TIP for calming down the banana flavor.
