We made outstanding tasty food, the recipes are:

  1. Sweet’n Sour Beets w/Summer Savory and Lavender
  2. Light’n Fresh Fennel w/tarragon pesto
  3. Bedtime Burdock Squash Soup
  4. Lemony Apple Bake

1) Sweet’n Sour Beets w/Summer Savory and Lavender

This dish is balancing — both warming and cooling, grounding (contractive) and expansive (lifting).

  • 3 small beets, grated
  • 1/2 head cabbage, thinly sliced (we used Savoy cabbage)
  • 5 flower heads fresh lavender
  • 1 tbls dried summer savory
  • 1/2 tbls tamarind paste
  • 1/2 cup red wine
  • optional: chopped roasted chestnuts

1. Cook the beets and cabbage in deep pot on medium- to medium-low heat until soft, 12 to 15 minutes, stir often.

2. Meanwhile, blend the lavender and savory in spice grinder.

3. Add the herbs to the tamarind and red wine, stir until well mixed.

4. Just before serving, add the tamarind mixture to the beet mixture, heat through and serve. We served it with the chestnuts.

2) Light’n Fresh Fennel w/tarragon pesto

This dish is cooling, expansive, motivating.

  • 2 fennel, bulbs and stalks thinly sliced, leaves chopped
  • 3 medium carrots, cut in half lengthwise and thinly sliced
  • 1 bunch parsley, leaves only
  • 2 small kale leaves, chopped, stalk removed
  • 1/2 cup chopped apples
  • 1 tbls hazelnut oil
  • 1 tbls dried tarragon leaves
  • 2 tbls applesauce
  • 1/2 lime, juice only (next time will use the zest)
  • smidgen of salt

1. Put sliced fennel and carrots in bowl, set aside.

2. In food processor: mix the rest of the ingredients well.

3. Toss the pesto in with the fennel and carrots.

NOTE: Chill the fennel and carrots with the other 1/2 lime juice and zest while making the pesto.


4) Bedtime Burdock Squash Soup

This soup is very warming, grounding, constrictive, slowing down — hence the bedtime title.

This dessert is grounding, warming.
