Here’s a quick, easy, tasty way to make Peach Cobbler. This cooking method goes quickly, so have all ingredients ready.

Peach Cobbler, the ingredients: Peaches, cake mix, butter, feta, Chinese 5 Spice, and blueberries (not shown).

Pamela's Gluten-free Cake Mix

 

Cooked in a saute pan, on the BlueStar range top.

 

Cover and let cook on medium-low heat for 15 to 20 minutes.

 

So thick it'll stay on the spoon. The blueberries add great color as well as a gelatin-like texture and thickness.

Peach Cobbler w/Blueberries and Feta Cheese

Makes 10 servings

Ingredients

  • 1 tbls Butter  (ghee, or Earth Balance for vegan option)
  • 10 Peaches, sliced
  • 1 cup Blueberries, some whole, some sliced
  • 2 tsp Chinese 5 Spices (or more to taste)
  • 1 cup Feta Cheese crumbles
  • 2 cups Cake mix  (I think 3 cups will be better, next time I’ll use 3 cups)
  • 1 tbls Butter  (ghee, or Earth Balance for vegan option)

Directions

  1. In large saute pan, on medium heat: warm the butter, add the peaches and blueberries and cook until soft, 5-10 minutes, stir occasionally.
  2. Add the Chinese 5 Spice, stir well.
  3. Add the Feta Cheese, stir well.
  4. Add the cake mix evenly on top of mixture, do not stir.
  5. Add dollops of butter, here and there, scattered, on top of the cake mix, do not stir.
  6. Cover and cook on medium to medium-low heat for 15-20 minutes, or until cake mix is well absorbed and cooked.
  7. Serve with sprigs of mint.
